One night, Cathy, Eric and I combined forces and each made a portion of our meal with strawberries. Yes, yes, we're such daredevils, but thinking of how to incorporate strawberries in the main course was definitely the biggest challenge we faced. Here's the appetizer & main course:
So amidst our Kentucky Fried Chicken/Popeyes world of fried chicken, I'm a personal fan of the salad. I'm not a huge health nut, but 8.5 times out of 10 I'll choose a well-balanced meal over things like fried chicken or cheese fries from Snuffer's (what I like to call, death on a platter).
Anyway, I think mixing strawberries in your salad is always a great idea. This one has a spring mix (found at HEB or Krogers), arugula, yellow bell peppers, almonds, mushrooms, cherry tomatoes & strawberries with a balsamic vinaigrette dressing. I love the vinaigrette's because they're light and probably better for you than the creamier dressing's like Ranch or Thousand Island.
For the main course, I cooked the chicken with brown sugar + some of the strawberry juices, mashed up some extras and put it on top. According to my dinner party that night, it wasn't a bad combo!
